We build our still wine selection around Spanish, often indigenous grape varieties and a clear objective: full, expressive flavors with a pure signature. No flaws, no noise, no polished “quick tricks” that impress at first sip but collapse in pairing. We choose wines that let their origin and grape speak—with control, but without sterility.

White wines offer both precision and presence: tension and saline-mineral lines where appropriate, but also breadth, texture and aromatic definition when the dish calls for it. Within a single grape variety we deliberately work with multiple styles—from tight and reductive to riper and more layered (sur lie, larger barrels, cement or amphora where appropriate)—as long as the result remains transparent and is not carried by make-up.

In reds we prefer character and drinkability, with real fruit tension and tannins that structure rather than block. Again: grape and terroir expression over imposed flavor. We offer both leaner, cooler interpretations as well as deeper, riper styles with more breadth and length—provided the wood remains supportive, extraction is not forced and the wine finishes clean and energetic.

Sparkling wines

We see sparkling wine as the most versatile tool on the list: tight and dry as an aperitif, but also gastronomic enough to cut through structure and fat in dishes that are more difficult for still wines to handle. We select based on fine mousse, tension and drinkability, with aging notes where needed (brioche, nuttiness) to add depth to more complex preparations. From amuse to (hard) cheese: for us, sparkling is not an afterthought but a serious pairing category.

We select dessert wines based on balance rather than sweetness. It is about control: exactly enough residual sugar to support patisserie, fruit or cheese, with fresh or spicy-oxidative counterbalance so the glass remains culinary. Think of styles that do not cling but guide: tension, aromatic precision and a finish that extends the dish rather than closing it.

Sherry and fortified wines

Sherry is still too often underestimated, while it is one of the most food-driven wines you can serve. It is the ultimate pairing tool: it directs umami, salt illusion and texture with a precision where still wine often has to “push” with volume or oak. Of course we offer the classic styles—fino, Manzanilla, Oloroso and Palo Cortado—from flor-tight and saline to deep, nutty and oxidative.

But it is precisely the intermediate categories that make the difference on a modern list. We offer many options that sit between “wine” and “sherry”: lighter, wine-like styles with sherry intelligence. They are highly gastronomic, accessible and surprisingly versatile. These are the bottles that refine a pairing without immediately going to extremes—and that often make guests understand in a single glass why sherry belongs at the highest level.

In addition to sherry, we offer fortified styles such as brandy and vermouth for culinary depth. Brandy provides warmth and length and also functions as a flavor component in jus and desserts. Vermouth adds bitter-herbal layering in aperitifs and pairings, with precise control over acidity/sweetness and aromatic tension.

We work with producers who make origin readable in the glass and take craftsmanship seriously. This means understanding plots and altitude, letting soils (granite, slate, limestone) speak, and using cellar technique as support rather than signature. From precision whites (fine wood, concrete or amphora; tension without heavy extraction) to elegant reds from old vines (transparent fruit, controlled tannin structure, saline-mineral finish). Wines with a distinctive terroir profile, high gastronomic versatility and real digestibility—made to make the plate better.
