The house specializes in fish preserves in premium olive oil: Cantabrian anchovies (anchoas), boquerones (anchovies marinated in vinegar), bonito del norte and sardines. Everything is processed by hand—from filleting and deboning to careful salting, maturation and packing—resulting in pure flavor, refined texture and consistent quality trusted by chefs, retailers and gourmets.
