Handmade cava from Sant Sadurní d’Anoia

Rimarts is a Catalan family estate from Sant Sadurní d’Anoia, the birthplace of cava. Here everything is still done entirely by hand—from tirage to remuage—and the wines age for a long time “sur lie” (up to 48 months). The result: a fine, creamy mousse, pure fruit and pronounced gastronomic tension. Rimarts stands for precision in detail: grapes from higher-altitude vineyards, cool fermentation, long autolysis and extremely careful dosage (from Brut to Brut Nature).
